  1. Such a beautiful place to live and be, and such glorious weather! enjoy my friend. As for corn... I like any which way as for me it could be its own food group. I love it fresh off the cob in a salad, my grilled corn chowder .... or of course mash potatoes and corn which is a complete meal for me. Pesto in potato salad? well that just sounds delicious. What a great idea

    1. Ah,yes, so very beautiful this time of year. Hope the heat there has eased up for you. I agree about corn ... on the cob, on the grill and in chowder but we would call it corn & potato soup with a bit of cheddar on top! I'm going to experience more with pesto knowing that a little goes a long way.

    1. It was all really beautiful, these new trails, and they went on & on. Nice discovery but my mind just kept thinking of mountain lions, which I usually don't, if anything it's bears ... I always blame things like this on my dreams the night before!

  3. So wonderful to hear that you are enjoying the beauty that surrounds you. I know your area has such harsh winters and then flooding at times...so I know you two are making hay while you can! Now that I've seen both of those dishes - just like my mom makes - well...I'm off to the kitchen because you've just made me so hungry!!! xoxo

  4. Yes, we do make hay! and there has also been a whole lot of cooking going on in the little bitty kitchen and on the tiny deck! I bet your mom knows this way of fixing corn, cut off the cob and cooked in the skillet, then thickened up with heavy cream, pats of butter, a little salt and lots of black pepper ... so good! Now, yes ... go cook!
